Bikini Recipe

Makes enough for 10 guests

Ingredients for the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Cocktail (produces 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

For the Cordial: Put every ingredients in a saucepan, heat until it reaches a gentle boil, mixing so the sugar melts. Next, remove from the burner and leave to cool entirely. Pour into an sterilised bottle, seal keeping it in the refrigerator, where it will keep for about one month.

To make Batch Mix: Combine all the liquids into a big jug, leave to sit for one hour, then pass it through preferably using cheesecloth, making it completely strained.

For serving: Pour 85ml of your batch mix into your cocktail shaker containing ice, gently stirring lightly for about 60 seconds to cool it down. Strain to a cold coupe glass or similar, top with a few cranberries adding the final touch by giving it a light spray of mandarin oil over the top.
